  Changsha Yuhe Vinegar features a strong and clear color, a refreshing fragrance, a mellow flavor, and a sweet and slightly sour taste.

  The traditional brewing process for Changsha Yuhe Vinegar is as follows:

  1. Preparing glutinous rice, the main ingredient.

  2. Soaking glutinous rice in water.

  3. Washing the rice.

  4. Steaming the rice.

  5. Pouring water into the steamed rice to cool it down.

  6. Mixing the rice with yeast.

  7. Fermentation.

  8. Pouring the juice over the rice until the rice is lifted from the bottom of the vat.

  9. Secondary fermentation.

  10. Acetic fermentation.

  11. Final blending and aging.
